Interview with Valerio, Winner of the Ecobnb Award: Innovation and Sustainability at La Noisette B&B
Nestled between the Roero and Langhe regions, a UNESCO World Heritage Site, La Noisette Eco B&B blends tradition, innovation, and environmental respect. Managed passionately by Valerio, this B&B has transformed his grandparents’ historic home into an energy-efficient building powered entirely by renewable energy sources. Recently awarded at the Ecobnb Awards, it exemplifies how sustainability can be a winning philosophy in tourism.
What Sparked Your Passion for Environmental Sustainability?
It all began when I faced the decision to renovate my grandparents’ house. I could either build a new, energy-efficient structure with low environmental impact or restore the original, less energy-efficient building. I chose sustainability. I wanted to transform a home rich in emotional value into a space that fully respects the environment.
What Key Aspects Define Your Path to Eco-Sustainability?
One essential realization was that tourism, if poorly managed, can significantly impact the environment. Beyond improving the energy efficiency of the B&B, we’ve minimized single-use products, prioritized zero-kilometer food for breakfast, and promoted activities like trekking and cycling to explore our area sustainably.
How Would You Describe Your Ideal “Eco-Traveler”
Our ideal eco-traveler is curious and eager to explore the area responsibly, often choosing less crowded times of the year for a more intimate and authentic experience. They seek hospitality that respects the environment and want to deeply connect with the region, far from mainstream tourist paths.
What’s the Most Meaningful Review You’ve Received, and Why?
More than reviews, it’s the relationships we’ve built with our guests that stand out. Some guests still write to us, even after a long time, just to send greetings or good wishes. For us, that’s the greatest recognition of our work: it’s not just a stay but an experience that leaves a lasting impression.
Busting the Myth: Is Sustainability Always More Expensive?
Absolutely not. In many cases, ecological choices lead to savings. For example, renewable energy sources and energy-efficient materials significantly reduce long-term costs. Additionally, choosing local and farm-to-table products not only benefits the environment but also supports the local economy. Sustainability isn’t just an ethical choice—it can also be economically advantageous.
Which Green Initiatives Have Been Most Satisfying and Appreciated by Guests?
Among all our initiatives, guests appreciate trekking opportunities the most. Many ask for information on trails and walks, and when possible, I love accompanying them personally. It’s a way to share not just the beauty of the landscapes but also our values tied to sustainability.
How Do the Values and Projects of Ecobnb Resonate with Your Establishment?
We are completely aligned with Ecobnb’s mission. Our philosophy is similar: promoting tourism that respects the environment and enhances the local area. Our B&B was designed with the goal of minimizing ecological impact, and we believe Ecobnb’s model can truly shape the future of tourism.
La Noisette Eco B&B showcases how tradition and innovation can harmonize to respect the environment while offering guests a unique and authentic experience. Staying at this eco-friendly B&B is not just a pause but an opportunity to engage with the Langhe and Roero regions more responsibly.
