She is a Ukrainian biologist whose passion for food turned into a profession; he is a former innkeeper and consultant in the agri-food sector, a lover of conviviality. On the occasion of their nomination for the Ecobnb Award, we interviewed Daniele, who shared the philosophy and sustainable choices that make Truffle ‘n Bed a unique experience.
What sparked your passion for environmental sustainability?
Rather than passion, we believe it is a strong mindset and deep sensitivity—one that, as temporary guests of Mother Earth, we should consider fundamental to our relationship with the planet.
What aspects do you consider essential in your eco-sustainability journey?
Extreme attention to the products we purchase, whether for cleaning, sanitation, and hygiene, or for what we offer at breakfast. We carefully select the materials most used by guests, such as sheets and towels, and we measure detergents to avoid waste, always opting for refills in recycled containers. Non-verbal communication is crucial: in the “Welcome Book” available in the rooms, we highlight our sustainable practices and invite guests to adopt them as well.
How would you describe your ideal “eco-traveler” guest?
We do not believe in an “ideal guest” but rather in the desire to welcome everyone and offer an environment that inspires attention to sustainability. Naturally, we resonate with those already sensitive to the issue, but we are particularly committed to engaging those who are less aware, refining their consciousness through direct experience.
Let’s debunk the myth that eco-sustainability is necessarily more expensive. In your opinion, can “Ecological” also mean “Economical”?
Perhaps not “expensive,” but neither “cheap.” Rather, I would speak of balance and fairness: if I pay the right price for a product that has a positive impact throughout the supply chain, from origin to the Earth that receives it, then its value surpasses the mere economic aspect.
Which green initiatives have given you the greatest satisfaction? Which have been the most appreciated by your guests?
The practices we communicate in the “Welcome Book” are highly appreciated.
Among them, the absence of single-use plastic: for example, water in the rooms is always provided in glass bottles.
Additionally, for stays longer than three nights, we ask guests if they would like their sheets and towels changed. The satisfaction? 60% choose not to change anything, demonstrating a strong sense of responsibility.
How do Ecobnb’s values and projects resonate with your establishment?
From the very beginning, we wanted to be part of Ecobnb precisely because we share common values. We are eager to grow together, be co-protagonists of a green approach, and actively participate in the projects the platform develops in the future.
