What sparked your passion for environmental sustainability?

Loving the environment has always been part of our lives. I moved here in 2007, leaving the city with my family, and we learned to appreciate the land and its natural rhythms. This love led to our organic farm and a hospitality style that reflects our commitment to sustainability.”

What are the key elements in your eco-sustainability journey?

One of Mille Mandorli’s pillars of sustainability is our focus on breakfast. We never use products from intensive farming or large distributors. Instead, we select only local, organic ingredients. This choice supports the local economy while minimizing the environmental impact of transportation and large-scale production.

Who is Your Ideal “Eco-Traveler” Guest?

My ideal guest is someone who conserves water and electricity and chooses thoughtfully. Mille Mandorli encourages mindful resource use, so we especially appreciate guests who share these values.

What has been your most memorable review, and why was it so special?

Our most cherished review came from a nine-year-old, who, with simplicity and sincerity, recognized the deep love for nature that permeates Mille Mandorli. He said we were an example for many, which touched our hearts deeply.

Do you believe “Eco-friendly” can also mean “Affordable”?

Sustainability doesn’t have to be costly. In Noto, for example, there are several eco-conscious accommodations that are affordably priced. Charging more in the name of ecology often seems like speculation, which makes me question the sincerity of their commitment.

Which Green Initiatives Have Brought You the Most Satisfaction?

One of our greatest satisfactions comes from our ‘cruelty-free’ breakfasts, which don’t include animal products from factory farms. Every year, I manage to convert 4–5 people from cow’s milk to plant-based alternatives. Seeing our guests discover the lightness of plant-based milk is more rewarding than any other achievement—no amount of money could make me happier.

How do Ecobnb’s values align with those of your establishment?

Sustainability, organic cleaning products, an almost entirely vegan breakfast, and fresh eggs from our happy, free-range hens are some of the ways our values resonate with Ecobnb.
