Just a stone’s throw from the sea and nestled among olive groves and vibrant vegetable gardens, Salos Organic Farmhouse exemplifies eco-friendly hospitality. Awarded the Ecobnb Award, it provides guests with an authentic experience close to nature, offering accommodations that include apartments, bungalows with kitchenettes, and a well-equipped agri-camping area.

Sustainability is a core commitment here: the agriturismo has been plastic-free for over ten years and offers free water purifiers to minimize waste while promoting a direct connection with the environment. Breakfast is prepared using organic and locally sourced ingredients, celebrating traditional flavors. The expansive green spaces and playground make it an ideal destination for families.

Salos: Awarded Organic Farmhouse in the Heart of Salento

We spoke with Michela, who shared insights about the Salos agriturismo’s green philosophy, her passion for nature, and the initiatives that guests appreciate the most.

What sparked your passion for environmental sustainability?

In truth, our passion for sustainability didn’t start with a single spark, if we can call it that—it has always been a way of life. When you grow up in an unspoiled environment, surrounded by nature all day, it becomes your only way of living. You don’t even consider the possibility of doing things differently, so you naturally extend that model to your guests, with the best intentions.

What are the key aspects of your eco-sustainability journey?

Being eco-sustainable today requires extra attention to our own habits and human habits in general. As an accommodation provider, we cannot ignore this. That’s why we strive to offer the same services as a “standard” facility but in a more eco-conscious way.

How would you describe your ideal eco-traveler?

Our ideal guest must love nature in all its forms, from the rooster crowing in the morning to the chirping of cicadas. Beyond that, they should have a respectful and harmonious attitude toward the surrounding environment, and above all, they must learn to share the space without harming it. The word “adaptation” is key in this regard.

What is the most meaningful review you’ve received, and what made it special?

The most significant reviews are those that praise our eco-friendly efforts. We love reading them because even a small drop in the ocean can make a difference.

Let’s debunk the myth that sustainability is always more expensive. In your opinion, can “eco-friendly” also mean “economical”?

Eco-friendly does not necessarily mean expensive. The most challenging part for a business is the initial transition, which may require a complete overhaul of habits. But once you embrace it, you never want to go back—especially since guests truly appreciate the effort a business puts into respecting the environment.

For example, we have been plastic-free for about 10 years, meaning we no longer use plastic tableware or buy bottled water. Instead, we installed free water purifiers and provided glass bottles. Over the years, we’ve seen significant savings on water purchases and a noticeable reduction in waste. Needless to say, guests love this choice, and many either already practice it at home or continue to do so after their stay.

Which green initiatives have been most rewarding for you? And which have been most appreciated by your guests?

The initiatives that have given us the most satisfaction are undoubtedly those related to waste reduction, the use of organic products, and the promotion of local resources. Guests have particularly appreciated the opportunity to purchase fresh, genuine products directly from our organic farm shop. Our waste management system and plastic-free journey have also been very well received.

How do the values and projects of Ecobnb align with those of Salos farmhouse?

Ecobnb’s values align with our philosophy because they are deeply embedded in the very foundation of our agriturismo. Since 1988, when my parents established it, the goal has been to create a small community where people could share values and ideals. Over the years, only the terminology has changed, but the core principles—love for nature and sustainability—remain at the heart of our daily work.
