It might seem incredible, but these plants typical of Mexico hide countless curiosities and will never cease to amaze you. Follow me on this trip to the city of Tequila, home of the agave.<\/h2>\n<p>If you think that <strong>Mexico<\/strong> is just a place of beautiful and paradisiacal<a href=\"https:\/\/ecobnb.com\/blog\/2021\/05\/cenotes-yucatan-caves\/\" target=\"_blank\" rel=\"noopener\"> Cenotes<\/a>, then you are wrong. On one side, we find the coasts of the Pacific and the Gulf of Mexico, on the other instead, there&#8217;s all the <strong>Mexican inland<\/strong> characterized by a dry climate and an arid territory. But even this land, at first glance harsh, hides unexpected<strong> treasures<\/strong>.<\/p>\n<p>Now, I will tell you about the <strong>agave<\/strong>, a unique plant symbol of the<strong> city of Tequila<\/strong>, State of Jalisco, Mexico.<\/p>\n<div id=\"attachment_41233\" class=\"thumbnail alignnone\"><img class=\"wp-image-41233\" src=\"https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/2-1-e1623245159344.jpg\" alt=\"Affresco Tequila\" width=\"916\" height=\"490\" \/><div class=\"caption\">Photo by Ted McGrath on Flickr<\/div><\/div>\n<h2>Agave: Roots from the Past<\/h2>\n<p>This plant is native to the <strong>Mexican plateau<\/strong> and is famous for being the raw material of tequila. Known by locals as <em><strong>maguey<\/strong><\/em>, however, it has many other uses. In the past, in fact, it played a fundamental role as inexhaustible good for the inhabitants living in the areas where it spontaneously grew.<\/p>\n<p>Agave is a <strong>source of water, food, medicines, fuels, building material, alcoholic drinks<\/strong>, and much more. Still today it represents one of the main supplies of some cities in Central America that guard its secrets and local production.<\/p>\n<h2>But What Does this Plant Look Like?<\/h2>\n<p><img class=\"alignnone size-large wp-image-41234\" src=\"https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/3-1-850x490.jpg\" alt=\"agave, tequila\" width=\"850\" height=\"490\" srcset=\"https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/3-1.jpg 850w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/3-1-536x309.jpg 536w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/3-1-768x443.jpg 768w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/3-1-344x198.jpg 344w\" sizes=\"(max-width: 850px) 100vw, 850px\" \/><\/p>\n<p>Agave is a <strong>succulent plant<\/strong> with rigid grey-green leaves which can reach up to two meters in length. Thanks to its particular metabolism and the little water it needs, it survives even in <strong>very arid areas<\/strong>. This is because the plant breathes and retains water at night and then closes its pores during the day avoiding liquid loss.<\/p>\n<p><img class=\"alignnone wp-image-41232 size-large\" src=\"https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/1-842x490.jpg\" alt=\"Tequila agave\" width=\"842\" height=\"490\" srcset=\"https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/1.jpg 842w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/1-536x312.jpg 536w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/1-768x447.jpg 768w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/1-344x200.jpg 344w\" sizes=\"(max-width: 842px) 100vw, 842px\" \/><\/p>\n<p>In between 7 and 25 years old, agave produces a sap called &#8220;<em><strong>aguamiel<\/strong><\/em>&#8221; which once extracted and fermented produces<em><strong> pulque<\/strong><\/em>, this nutritious and slightly alcoholic drink. The aguamiel is directly extracted from the heart of the maguey and has a <strong>sweet taste<\/strong> and <strong>honey-like texture<\/strong>. From here the name &#8220;honey water&#8221;.<\/p>\n<p>Among the many other products coming from the agave we also find <strong>mezcal<\/strong>. This alcoholic drink is native to the city of Oaxaca and today it is produced in all those territories rich in agave plants.<\/p>\n<p><img class=\"alignnone size-large wp-image-41236\" src=\"https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/5-1-777x490.jpg\" alt=\"tequila\" width=\"777\" height=\"490\" srcset=\"https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/5-1.jpg 777w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/5-1-536x338.jpg 536w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/5-1-768x484.jpg 768w, https:\/\/ecobnb.com\/blog\/app\/uploads\/sites\/3\/2021\/06\/5-1-344x217.jpg 344w\" sizes=\"(max-width: 777px) 100vw, 777px\" \/><\/p>\n<p>But then what is the difference between tequila and mezcal?<\/p>\n<p>All liquors produced from the agave are mezcal. Then, depending on the process and the type of agave used, they differentiate into pure mezcal and tequila. The mezcal is produced exclusively in an artisanal way and 100% agave distillate. Only <strong>60 km away from Guadalajara<\/strong>, the city can be easily reached either by car or by train.
